“This book was born from the conviction about a product that became my obsession: the highest-quality olive oil. I am driven by the desire to promote its dissemination, to contribute to the knowledge of a unique food, and by the aspiration that more and more people will include it on their everyday table. In these pages I share the knowledge I acquired at every step through the Mendoza olive groves and through many different plantations in Argentina and around the world. I hope this small contribution helps to highlight the value of our region”.
